I used tuna steak, but here are some other great options and how to use them:
Cook like tuna steak: beef steak
Add in to cook once the veg is cooked: prawns
Cook with the onions before adding the peppers: chicken, pork
Cook in the pan at the same time as the veg: Halloumi, tofu, quorn
Serves 1, Makes 2 fajitas
Ingredients:
1tbsp Extra Virgin Olive Oil
2-3tsp Veggie Rub 03
1/2 red pepper
1/2 yellow pepper
1/2 medium onion
Tuna steak
2 tortillas
Salsa (we’ve got a recipe for fresh salsa)
Sour cream & chive dip (or try our cucumber yoghurt salad recipe)
Method:
- Slice your veg.
- Add the oil to a frying pan on a medium heat. Add the onion and pepper. Cook for a couple of minutes until they’re starting to soften.
- Sprinkle in half the Veggie Rub, stir to coat and continue to fry.
- Rub the rest of the Veggie Rub onto the outside of your steak. Massage it in both sides.
- Taste the veg and add more seasoning if you like.
- Once the veg looks cooked to your liking, push it to edges of the pan. Put the steak in the middle and leave it until the opaqueness begins to creep up the the edges. Then flip it and do the same on the other side. You can cook it as long as you like, but I like mine rare. Remove the steak from the pan as soon as it’s done.
- Meanwhile, place your tortillas on a plate and microwave them for about 15 seconds just to warm them.
- Slice your steak.
- To assemble your fajita, place a tortilla on a plate and spoon salsa and sour cream dip into the middle in a long shape, leaving space at either end. Then top with veg and steak. Extra chopped fresh coriander is always nice, and some people add grated cheese too.
- Then fold one end of the tortilla up and fold the sides in. Enjoy!
