Blood Orange & Garlic Dressing

Blood Orange & Garlic Dressing

This is my go-to salad dressing. You can mix the ingredients with a fork/whisk or you can put them in a jar and shake it. There are no quantities, I just add until I’m happy with the taste and you can do the same, but generally you want more oil than vinegar. Probably about 1 part vinegar to 2 parts oil.

Ingredients:

Blood Orange Balsamic Vinegar

Extra Virgin Olive Oil with Garlic or Extra Virgin Rapeseed Oil with Garlic

Ground black pepper (a lot)

salt (salt brings out the other flavours, so don’t be afraid to add a little more if you’re underwhelmed)

Instructions:

1) Mix all the ingredients in a bowl or shake to combine in a jar.

2) Pour over your salad and stir to coat.

3) Taste a bit and add more of whatever ingredient you think is lacking. Don’t be afraid of adding more salt.

The salad pictured uses carrot, tomato, cucumber, celery, orange pepper and spring onion.
