Creamy Paprika Pasta

Serves 2

 I didn’t use spinach but I think it would be a nice addition. It might also make more servings.

 

Ingredients:

Most of a bottle of Pott’s Roasted Pepper & Smoked Paprika Dressing

2tbsp soft/cream cheese

Black pepper

1 large onion (chopped)

150g spinach (optional)

Pasta for 2 people (I used 4 bundles/nests of fresh tagliatelle)

2tsp Extra Virgin Olive Oil

Handful fresh basil leaves (optional)

 

Instructions:

 

1. Cook pasta according to instructions.

2. Put the spinach in a colander and pour boiling water over it to shrink it. Leave to drain.

3. In a saucepan, fry the onion with the oil over a medium heat until translucent.

4. Add the spinach and fry for a minute or two.

5. Stir in the sauce and the cheese and warm through.

6. Add more cheese to taste.

7. Season with pepper to taste.

8. Stir the pasta in the sauce to coat it.

9. Serve topped with basil.
