Roasting potatoes
Yorkshire Rapeseed Oil with Garlic
Method:
- Peel the potatoes and chop them into halves or quarters.
- Put the potatoes in a saucepan and cover with water.
- Preheat the oven to 180C fan.
- Pour some garlic oil in an oven dish- enough to coat the potatoes in later. Put the dish on the middle shelf in the oven.
- Bring the saucepan to the boil. Boil the potatoes until a fork goes in fairly easily and the edges look fluffy.
- Drain the potatoes.
- When the oil in the oven dish is hot, add your potatoes. They should sizzle on contact with the pan. Spread them out in the dish and turn them to coat them in the oil.
- Roast them for 30 mins before adding a splash more garlic oil.
- Roast for another 10 mins. They should be golden and crispy.
