Serves 3
Ingredients:
Pasta
1tbsp Extra Virgin Olive Oil
1/3 jar Jerk Marinade
Big handful fresh chopped parsley
2 medium onions (chopped)
Juice of 1/2 a lemon
15 large king prawns
Method:
- Stir up the marinade thoroughly. Pour it over the prawns in a bowl and stir to coat. Cover and put in the fridge for 15 mins before you start cooking.
- Cook the pasta according to packet instructions, drain and set aside.
- Heat the olive oil in a large frying pan over a medium heat. Fry the onions until transparent -about 5mins.
- Continue to fry the onions on a very low heat to sweeten them -about 5mins. Add more oil if they’re sticking.
- Put the prawns and the marinade in the frying pan and fry until they’re opaque -about 3 mins.
- Stir in the lemon juice and parsley.
- Stir the sauce and prawns into the pasta and serve.
