Smokey Roast Veg

I served this with different salads (see our other recipes), but it also makes a great side for meat and fish. Of course, you can use whatever veg you like for this dish.

Ingredients:

Courgette (sliced)

Extra Virgin Olive Oil

Onion (sliced)

Veggie Rub 03

 

Method:

  1. Preheat the oven to 160C Fan.
  2. Put the veg in a roasting tin. Drizzle with oil and sprinkle with the rub.
  3. Stir it all to coat the veg.
  4. Put it in the oven and roast for 30mins.
  5. Stir it and taste a bit. If you want it softer and sweeter, cook it for another 10-20mins.
