I served this with different salads (see our other recipes), but it also makes a great side for meat and fish. Of course, you can use whatever veg you like for this dish.
Ingredients:
Courgette (sliced)
Extra Virgin Olive Oil
Onion (sliced)
Veggie Rub 03
Method:
- Preheat the oven to 160C Fan.
- Put the veg in a roasting tin. Drizzle with oil and sprinkle with the rub.
- Stir it all to coat the veg.
- Put it in the oven and roast for 30mins.
- Stir it and taste a bit. If you want it softer and sweeter, cook it for another 10-20mins.
