This is an interesting and simple side dish served hot or cold. Try serving with other salads, or with jerk chicken and rice.
Ingredients:
Veggie Rub 03
Oak Smoked Yorkshire Rapeseed Oil
Tinned pineapple rings
Pinch of salt
Method:
- Preheat the oven to 180 degrees C.
- Lay the rings out flat on a baking sheet.
- Drizzle with oil.
- Sprinkle with a generous amount of rub.
- Turn the rings over and rub them in the oil and seasoning. Then turn them over again and rub them around. This is to coat them.
- Roast the pineapple in the oven for 20-30 mins, until they’re lightly brown and crisping at the edges.
