Smokey Roasted Pineapple

This is an interesting and simple side dish served hot or cold. Try serving with other salads, or with jerk chicken and rice.


Ingredients:

Veggie Rub 03

Oak Smoked Yorkshire Rapeseed Oil

Tinned pineapple rings

Pinch of salt

 

Method:

  1. Preheat the oven to 180 degrees C.
  2. Lay the rings out flat on a baking sheet.
  3. Drizzle with oil.
  4. Sprinkle with a generous amount of rub.
  5. Turn the rings over and rub them in the oil and seasoning. Then turn them over again and rub them around. This is to coat them.
  6. Roast the pineapple in the oven for 20-30 mins, until they’re lightly brown and crisping at the edges.
