Balsamic Roast Beetroot


This is a delicious side dish, especially with roast dinner. Experiment with some fresh thyme and a squeeze of lemon juice too.



Raw beetroots

Extra Virgin Olive Oil

Fig & Date Balsamic Vinegar (or a balsamic of your choice -I think Date & Smoked Bacon could be delicious.)

Garlic (optional)



1) Preheat an oven to Fan 180 degrees Celsius.

2) Peel the beetroot and cut into 1cm thick slices.

3) If using, peel the garlic.

4) Add the veg and some oil in a roasting tin and toss to coat.

5) Roast the veg for about 20mins. Drizzle with vinegar and roast for another 5-10mins, until cooked to your preferred texture.

6) Serve and enjoy.
