I served this with salad dressed in Wild Garlic Sauce and Extra Virgin Olive Oil. This tart recipe is vegetarian if you make sure the cheese is vegetarian.
Serves 2-3
Ingredients
1 roll of readymade puff pastry
4-6tbsp Caramelised Onion Marmalade
10ml Date & Bacon Balsamic Vinegar
Blue cheese
mozarella
rocket
walnuts (optional but they add a nice crunch)
Method
1) Preheat the oven to 200C fan or whatever the pastry packaging recommends.
2) Unroll your sheet of pastry, on top of the paper it comes with, onto a baking sheet.
3) Score a line on the pastry about 1 inch in from the edge on each side. You’re drawing a smaller rectangle within the rectangle of the pastry. This creates the border that will puff up into a crust.
4) Spread the Caramelised Onion Marmalade on the pastry, staying within the scored border.
5) Slice the mozzarella and place on top of the onion marmalade.
6) Crumble the blue cheese over the onion and mozzarella.
7) Drizzle with the balsamic.
8) Scatter the walnuts over the other toppings.
9) Place on the middle shelf of the oven and cook for 10-15 minutes until the crust is golden and puffed.
10) Scatter with fresh rocket.
