Ingredients:
Extra Virgin Olive Oil with Basil
Extra Virgin Rapeseed or Olive Oil with Garlic
Cherry or plum tomatoes
Fresh basil
salt
Bruschetta breads or any toasted bread
Method:
1) Chop the tomatoes into small pieces and finely chop the basil. Stir together in a bowl.
2) Add enough garlic and basil oil to coat the tomatoes, plus a bit more. I used about double the amount of garlic oil that I did basil, but you can adjust the amounts based on what you want to be the strongest flavour.
3) Mix everything, season with salt and taste. Season with more salt if needed. The salt should make all the other flavours stronger, but not make it taste salty.
4) Now either serve immediately, or for best results, cover and refrigerate for a while. Leaving it for a few hours or overnight is best for letting the flavours meld. It will keep in the fridge for a couple of days.
5) To serve, simply spoon a little oil on the bread and then top with some of the tomatoes.
