SERVES 1-2
Ingredients
200g sirloin steak
2 tbsp extra virgin olive oil
2 tsp light soy sauce
1 tsp maple syrup (can use agave, honey or regular sugar)
2 tsp chimichurri
200g baby tomatoes
Juice and zest from 1 lemon
2 spring onions, thinly sliced from root to tip
handful of fresh coriander leaves
1 tsp hemp seeds
1 tsp chia seeds
Method
- Coat the steak on both sides with 1tsp of the chimichurri
- Sear it for 2-3 minutes on each side on a hot bbq (can pan fry as alt opt)
- Remove and cover with foil and set aside
- Mix the olive oil, remaining chimichurri, soy sauce, maple syrup, lemon zest and juice in a bowl and mix together, then add the tomatoes and spring onions
- Slice the steak into strips and place on serving plate then cover with the tomato and spring onion salad and finally sprinkle the coriander leaves, hemp seeds and chia seeds
