Lemon, Honey & Balsamic Roast Veg with Couscous

Serves 1 

Ingredients:

400g Mediterranean veg, chopped into slightly larger than bitesize pieces. I used aubergine, courgette, red pepper, red onion, and whole cherry tomatoes. 

1-2tbsp Extra Virgin Olive/Rapeseed Oil with Garlic

50g feta

Approx. 150g lemon flavoured couscous (approx. 50g uncooked) 

1tbsp Lemon Balsamic Honey Glaze

A few olives, sliced (optional)

A few cloves of sweet garlic in paprika, sliced (optional) 

Method:

1a) Oven: Preheat oven to 180 degrees fan. Spread the Mediterranean veg out in a roasting tin and toss in enough oil to coat it.
Cook the veg in the oven for 30minutes, stirring/turning the veg half way through. 

or

1b) Airfryer: Put the veg in the air fryer (without the net) and toss in enough oil to coat. Air fry the veg at 180 degrees for about 12 minutes, stirring/turning half way through. 

2) Meanwhile, prepare the couscous according to the packaging if needed. 

3) Put everything in a dish and crumble in the feta. Toss to combine. 

4) Either eat straight away or refrigerate to be eaten cold later.
