Pancakes with Vanilla Ice Cream, Bramley Apple Sauce and Shortbread Crumble Pieces

Makes: Roughly 12

Ingredients:
100g plain flour
2 large eggs
1 tbsp Extra Virgin Rapeseed oil, plus a little extra for frying
pinch salt
300ml milk
2 tbsp maple syrup
8 tbsp Bramley Apple Sauce
good quality vanilla ice cream
shortbread biscuits, crumbled

Directions:
1) In a large mixing bowl combine the flour, eggs, oil and salt. Add the milk little by little whisking all the time until the batter is smooth.
2) Heat a little oil in a large frying pan. Put a small ladle of batter in the pan, move the pan to spread it out into a circle. Cook for around 1 min before flipping and cooking the other side.
3) Put on a plate. Stir the maple syrup into the Bramley Apple Sauce.
4) On the plate, top the pancake with a large scoop of good quality vanilla ice cream, Bramley Apple Sauce mix and shortbread pieces.
