Pesto & Goats Cheese Pasta

Pesto & Goats Cheese Pasta

A super quick and healthy mid-week meal!
The goats cheese isn’t essential, so feel free to skip it, but it is tasty.
Vegetarian and could be made vegan easily.
Ingredients:
  • Pasta (For fresh pasta, I do a handful per person and then an extra handful for luck)
  • Bell pepper
  • Cucumber
  • Cherry tomatoes
  • Celery
  • Goats cheese
  • Lucy’s Green Pesto Dressing
Method:
1. Cook your pasta according to instructions. Then drain and return to the saucepan on a low heat.
2. Meanwhile, chop all the veg into bite size pieces and halve the tomatoes.
3. Pour as much dressing into the pasta as you like and stir to coat it. Add the veg and stir to coat. Add more dressing if you like. Stir it all for a minute or two until it’s not cold.
4. Serve in a dish with a large slice of goats cheese on top. When you eat it, the goats cheese will melt into pasta and create a delicious creamy pesto sauce.
