White Balsamic Red Cabbage

White Balsamic Red Cabbage

This is like a cheat version of braised red cabbage and is great with roast dinner. The balsamic adds sweetness. The white balsamic and frying (rather than steaming) mean the colour stays vibrant. You can add other veg too, like mushrooms or red pepper. Just be aware that it will all be stained purple.

Serves 3-4 as a side.

Ingredients:

1-2tbsp Extra Virgin Olive Oil

Small red cabbage

1-3tbsp White Balsamic Vinegar (plain or Wild Garlic)

1/2tsp-tsp ground nutmeg

Black pepper

Salt

 

Method:

1) Slice the cabbage into bitesize pieces.

2) Add 1-2tbsp of oil to a large frying pan on a medium heat and add the cabbage.

3) Add a sprinkling of ground nutmeg, a good splash of balsamic and a generous amount of black pepper

4) Cook until softened slightly (5-10 mins). Taste it and add salt, pepper, balsamic and nutmeg if needed.

5) Once it’s the taste and texture you like, serve and enjoy. I usually cook mine for 15-20mins so it’s still got a little chewiness but isn’t tough.
