Rich, creamy and spicy; a labour of love, we ferment a careful balance of red chillies and garlic for five days, giving this mayo its tongue-tingling tang. Adds panache to burgers, chicken wings and scrumptious spice to sarnies and fries.

Try in egg mayo sarnies or dollop on dishes as a classic condiment.
