What is White Balsamic?

White balsamic vinegar is made with the same ingredients as normal balsamic vinegar and is used in the same ways. Both start as white grape must (crushed grapes). The difference is that white balsamic is pressure cooked, rather than slowly simmered, to prevent it turning brown. It is then aged for a shorter time than normal balsamic, usually in a stainless steel drum, rather than the traditional wooden barrel.

Its light colour makes it especially useful for dressing or marinading brightly coloured foods or for adding to light coloured sauces- which is exactly why chefs love it. It won’t turn your food brown!
